I went with several plys and layed it all out on foil with glass and then lastic top and bottom. While I used the pizza cutter to trim the shape I've found more recently I can just cut it with the right sissors and its much easier.
Pic 2 and you can see its a challenging layup. It was make a lot easier with my rotisseri setup and was pretty easy in the end. Like most of these jobs they need a bit of thought and preparation.
