For our first task, we chose to mount the MLG tires on the rims. 1) It saves a small amount of space to have them together, and 2) there if very low risk of me screwing something up. I assessed that the worst we could do was pinch a tube and ruin it. I can accept that risk.
An additional note is that everything I describe from here on are tasks that we are all doing for the first time. I've never mounted a tire. Thus, they take longer and there's lots of 'huh, how does this work?' I worked the first tire and Brayden did the second.
Lessons learned: This would have been easier with a different allen key. I have the standard L-shaped allen wrench set. The hex-head bolts were down in the rim far enough that I had to put the allen wrench on length wise and use a set of pliers to get enough torque on the short end to get the bolts off and on. A better different hex wrench would have made this easier.
Additionally, we started blowing up the tire and lots of air was escaping. I was alarmed that I actually had ruined a tube. Whew, it was just the air between the tire and tube escaping through the tire bead that partially sealed. Did I meantion that we don't have any experience?
