I have more right rudder than left rudder, so the only way I can see to adjust this is to bend the pedal stops. I bent the left ones to parallel, and at this position the left rudder is stopped a few degrees before the rudder bottoms out on the Vstab; perfect.
The right rudder bottoms out on the Vstab, so I bent the stops toward each other quite a bit, but I still need 4-5mm more. I'll send these pics to TAF and see what they say.
