Last night I leveled the workbench with shims as best I could and used the laser one last time to sand the surface with the belt sander. Today I trimmed the two sheets of 3/4" MDF down to 4' x 7' so that the overall size of the workbench is now 4' x 14'. I have decided to do away with the wheels and adjustable feet. I will apply wax polish to the surface so that I can use hot glue to tack airplane parts to the surface without messing up the surface.
