The Fokker D-VII in image 1 below is a full scale replica. I couldn't see what engine was under the cowl but it appears to be a liquid cooled powerplant. It isn't likely to be a Benz engine but then who knows. I may go back out to the show on Sunday and try to pick up some additional information.
Most replica fighters are about 7/8 scale so they can use small engines like the Volkswagen. I believe, however, the Fokker Dr-I was full scale. Again, I am not sure of the engine.

P.S. Went back to the show on Sunday and checked the engines in the D-VII and Dr-I. The D-VII had a Ranger (from a Fairchild F24) and the Dr-I had a Lycoming (horiz opposed 4 cylinder). Both installations were very well disguised so from a distance they looked authentic.
